یکی از شایع­ترین عفونت­ های انگلی انسان و سایر حیوانات خونگرم، توکسوپلاسموز است که توسط انگل تک‌یاخته­ی توکسوپلاسما گوندی ایجاد می­شود. مصرف مواد غذایی آلوده و انتقال از مادر به جنین از مهم­ترین راه­های انتقال می­باشد. انسان با خوردن محصولات لبنی آلوده به توکسوپلاسما، به توکسوپلاسموزیس مبتلا می­شود، لذا هدف از مطالعه حاضر بررسی شیوع توکسوپلاسماگوندی در پنیر، کره و خامه­های سنتی عرضه شده در شهرستان کاشان به روش Nested PCR است. تعداد 50 نمونه از محصولات لبنی شامل 30 نمونه پنیر سنتی، 10 نمونه خامه سنتی و 10 نمونه کره­ سنتی از مراکز عرضه در شهرستان کاشان به صورت تصادفی نمونه گیری و به آزمایشگاه بهداشت مواد غذایی دانشگاه آزاد اسلامی واحد شهرکرد منتقل شد. از نرم افزار آماری SPSS نسخه 23 و آزمون کای­اسکوئر جهت آنالیز داده­ها استفاده شد و سطح معنی­داری (05/00p>) در نظر گرفته شد. نتایج نشان داد که 7/6 درصد از پنیرهای سنتی (2 نمونه) به توکسوپلاسما آلوده بودند و در خامه و کره­های سنتی آلودگی منفی بود. آلودگی شیر خام و به موازات آن، فرآورده­های لبنی سنتی به توکسوپلاسماگوندی می­تواند به شکل غیرمستقیم از حیوانات آلوده و یا درنتیجه عدم رعایت الزامات بهداشتی در فرایندهایی همچون شیردوشی، جابجایی­، نگهداری و آلودگی متقاطع باشد. بنابراین سالم­سازی اصولی شیر قبل از مصرف و سپس تبدیل آن به فرآورده­های لبنی­ پیشنهاد می­گردد.
